RED Chocolate was born from passion!

In the early 2000s, Swiss-owned Chocolette Confectionary had a dream to revolutionize the chocolate industry by mastering a recipe that delivered the sweetness chocolate-lovers crave without adding refined sugars. They first introduced RED to the European market, and without surprise, RED gained popularity throughout western Europe. In 2018, RED was introduced to the U.S., where we’ve been winning the hearts of chocolate-lovers from coast-to-coast.

Great chocolate can only be made in the best of facilities. RED is cooked in our technologically-innovative, green-certified factory, holding ten global patents. Our custom-made equipment was designed by leading German and Swiss manufacturers to ensure Earth-happy processes in water and air purification, water recycling, free cooling, and recuperation technologies.

We use an innovative approach at every stage of production from choosing ingredients to a unique chocolate shape.

Cocoa is thought to have first been developed as a crop in South American cultures; Aztec and Mayan being the most well-known. However, the earliest record of cocoa dates back to 1400 BC in Honduras where during an archeological excavation pottery with traces of cocoa residue was discovered. It is believed that native cultures used cocoa beans to create a bitter drink often used in religious ceremonies. In fact, it is from that practice that we get the word chocolate.

The word “chocolate” stems from two South American native words: “chocolatl” which translates to “hot water”, and “cacahuatl”, which referred to a bitter beverage made with cocoa and shared during religious ceremonies. In fact, most of cocoa’s history is charted as a sugarless, bitter drink. It wasn’t until the Spanish Conquistadors arrived in the New World abd discovered the value in cocoa that the drink’s recipe was revised with the addition of sugars and spices, creating the drink we love today—hot chocolate.

Spain kept their recipe secret for nearly a hundred years before sharing with the rest of western Europe, where it quickly became beloved by the upper class. The Industrial Revolution made producing cocoa powder quicker and much more affordable, expanding the accessibility of cocoa to middle and lower classes. In 1850, Joseph Fry discovered that by adding cocoa butter to cocoa powder it created a solid mass and solid chocolate was born. Sixty years later, Belgian chocolatier, Jean Neuhaus II added flavored filling to chocolates, creating pralines. Today, more than 4.5 million tons of cocoa beans are consumed annually around the world.
 

OUR INGREDIENTS

Our recipe includes only the finest ingredients. Each batch of RED chocolate is crafted using only natural cocoa powder and cocoa butter delivered from the Ivory Coast (Côte d’Ivoire); Erythritol, a natural sweetener also known as “melon sugar”; Polydextrose, a natural food fiber aiding in digestion, and; Zero-calorie sweetener, stevia.
 

OUR COCOA

Quality cocoa products are at the heart of RED Chocolate. In line with our mission to produce a great-tasting, healthier chocolate without compromise, we only use cocoa products from Ivory Coast suppliers.

Our suppliers own and operate their own cocoa farms, maintaining the highest standards during bean selection as well as throughout the roasting and grinding processes. RED chocolate is then cooked at a reduced temperature of 131°F (comparative to 176°F), to release only the most elegant taste and aroma notes, whilst ensuring the final taste is delicately decadent.

Erythritol is an all-natural, zero-calorie sweetener known as melon sugar. It is derived from melons, grapes, and other fruits.


Matlitol is an all-natural sweetener which is found in many fruits and vegetables.

Polydextrose is a natural food fiber, helping in digestion.


Stevia is an all-natural, zero-calorie sweetener derived from the stevia plant.
